Easy Smores Popcorn Recipe - An easy-to-make, no-bake sweet treat for a party or get-together! Cute addition to a camping-themed party!

This s’mores popcorn is SUCH a simple and delightful snack for a get-together or party! It also makes a cute snack for a camping-themed or outdoorsy-themed kids’ birthday party. I make candied popcorn a lot for different events because it’s so easy to make and it’s so easy to customize to any occasion! I threw my daughter a western-themed birthday party based on a story in my recently-published children’s book, The Adventures of Pootsey the Wonderbug, and I made this s’mores popcorn (to mimic a chuck wagon camp out snack) as one of the treats, including candy boots & stars I made using some plastic candy molds I already had. Look how cute!

Y’all, unless you burn the popcorn, this snack is hard to mess up, and yet it’ll be one of the treats that keeps people talking for months about how yummy it is! I love making a big batch of this for family gatherings or fun times with friends – it serves as a great centerpiece of conversation. It’s so easy to just stand or sit and snack on this and get lost in conversation with others (and lose track of how much of this popcorn you’ve eaten until you realize the bowl’s almost empty!) – this snack does more than just satisfy a sweet tooth, it’s also a great community-builder! 🙂

The recipe is at the bottom of the page, but I’m going to walk you through it because I want to be sure to share a couple of special notes for the recipe to help you make your popcorn even better!

Here’s what you need to make this easy s’mores popcorn recipe:

This recipe is good for one bag of popcorn, but if you’re making this for more than 4-5 people, I’d definitely double or triple the recipe to make more! 

  • 1 bag popcorn, popped (I use the light butter kind)
  • 4 oz white candy bark (This is what I always use when I need candy bark, but you can use a different brand of candy bark or white chocolate chips)
  • 1.5 c mini semisweet or milk chocolate chips, divided
  • 1 c mini marshmallows
  • 1 c graham cracker pieces (about 3-4 graham crackers)

1. Melt the white candy bark in a microwave-safe bowl. Microwave it for about 45 seconds, stir, and repeat until fully melted. (You should only need to microwave it 2-3 times.)

2. While the candy is in the microwave, pour the popcorn from the bag into a large bowl. THIS TIP IS IMPORTANT and you’ll thank me for it later: When you’re moving the popcorn from the bag to the bowl, first, lightly shake the bag of popcorn up and down to help any unpopped kernels fall to the bottom of the bag. Then, using your hands, move the popcorn from the bag to the bowl so you can keep those kernels at the bottom of the bag and avoid transferring them to the bowl. If a bunch of kernels make it into the bowl and then get covered with the candy bark, they’re really hard to see, and then when you take an innocent bite with a kernel stuck to the popcorn, you’ll get a very unpleasant surprise between your teeth! I’ve found if I do this method of transferring the popcorn, I avoid a lot of toothaches!

3. Once the candy bark is melted, drizzle some onto the popcorn, stir, and continue drizzling and stirring until the popcorn is evenly coated.

4. Line a large cookie sheet with foil and then pour the candied popcorn onto the foil. Spread it out with the spoon/spatula you used to stir it. When you evenly distribute it along the pan like this, it helps the candy to dry more quickly, and it also helps avoid creating huge lumps of candied popcorn.

5. Next, melt 3/4 of a cup of chocolate chips using the same method you used when you melted the candy bark. Once melted, evenly drizzle the chocolate onto the popcorn.

6. Pour on some of the graham crackers and marshmallows (maybe about half of each – this isn’t scientific!) and toss everything together with a spoon/spatula on the pan.

7. Pour on the remaining graham crackers and marshmallows, as well as the rest of the chocolate chips (the ones you didn’t melt in the microwave), and toss everything together.

8. If you have any remaining melted candy – either the candy bark or chocolate chips – go ahead scrape the bowl(s) and drizzle the rest of it over the popcorn mixture and stir.

9. Allow to sit for 10-15 minutes at room temperature or in the fridge for a few minutes in order to fully set before transferring to a bowl or airtight container. Though it’ll get a little soft, you can easily store this in an airtight container for 5-7 days and it’ll still taste good!

Serve this just the way it is, or jazz it up with some fun colored sprinkles to go along with the theme of a particular celebration, or do what I did and make some easy candy shapes using candy bark and candy molds (this is the one I used to make these adorable cowboy/cowgirl candies!).

Ingredients

  • Transfer the popped popcorn from the bag to a large mixing bowl, doing your best to avoid pouring unpopped kernels into the bowl*
  • Drizzle some of the melted candy bark onto the popcorn, stir, and continue drizzling and stirring until the popcorn is evenly coated.
  • Line a large cookie sheet with foil and then pour the candied popcorn onto the foil. Spread it out with the spoon/spatula you used to stir it.
  • Next, melt 3/4 of a cup of chocolate chips using the same method you used when you melted the candy bark.
  • Once melted, evenly drizzle the chocolate onto the popcorn.
  • Pour on some of the graham crackers and marshmallows - maybe about half of each - and toss everything together with a spoon/spatula on the pan.
  • Pour on the remaining graham crackers and marshmallows, as well as the rest of the chocolate chips (the ones you didn't melt in the microwave), and toss everything together.
  • If you have any remaining melted candy - either the candy bark or chocolate chips - go ahead scrape the bowl(s) and drizzle the rest of it over the popcorn mixture and stir.
  • Allow to sit for 10-15 minutes (in room temperature) or in the fridge for a few minutes in order to fully set before transferring to a bowl or airtight container. Though it'll get a little soft, you can easily store this in an airtight container for 5-7 days and it'll still taste good!
  • Serve and enjoy!

Notes
